Among the eleven women in the Taigan office, there’s a distinct preference for cheese of the goat persuasion. Of course we appreciate all types of cheeses—the creamy dreaminess of cow, the barnyard funk of sheep—but there’s just something about the goat that does it for us. Maybe it’s the tangy zing of acidity, the chalky, grassy aroma, or the delicate, elegant texture that makes goat so seductive. Whatever it is, we can’t get enough.
